Veggie-Packed Egg Muffins

These egg muffins are my go-to for Sunday meal prep. I make a batch, and my family has grab-and-go breakfasts all week. They’re basically mini frittatas that you can hold in your hand - what’s not to love?
The best part? You can sneak in so many vegetables that your kids won’t even notice. My daughter thinks these are “cupcakes for breakfast” and asks for them constantly!

- Preheat: Set your oven to 375°F (190°C). Spray a 12-cup muffin tin generously with cooking spray.
- Prep the veggies: Chop all your vegetables into small, uniform pieces. If using raw meat, cook it first and let it cool.
- Whisk the eggs: In a large bowl, whisk together eggs and milk until well combined. Season with salt and pepper.
- Divide the veggies: Distribute the chopped vegetables and cheese evenly among the muffin cups. Fill each about 2/3 full.
- Pour the eggs: Carefully pour the egg mixture over the vegetables in each cup, filling almost to the top.
- Bake: Bake for 18-22 minutes, until the eggs are set and the tops are lightly golden. A toothpick inserted in the center should come out clean.
- Cool and store: Let cool for 5 minutes in the pan, then remove. Store in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.

Reheat like a pro: Microwave for 30-45 seconds if refrigerated, or 60-90 seconds if frozen. They taste just as good as fresh!
Change it up: Use whatever vegetables you have on hand. Broccoli, zucchini, mushrooms - they all work great.
More protein: Add cooked chicken sausage, turkey bacon, or ham for extra protein.
Dairy-free: Skip the cheese and use your favorite dairy-free milk. Still delicious!
Meal prep hack: Make a double batch and freeze half. Future you will thank present you.
